Key Technical Takeaways & Engineering Insights
Rapid raw milk reception chilling below 4°C is essential to halt microbial growth under Bangladesh ambient humidity.
Plate pasteurizers with 90%+ regenerative heat recovery drastically reduce boiler steam fuel expenses.
Tubular Direct Steam Injection (DSI) or indirect tubular UHT lines provide 6-month ambient liquid milk shelf-life.
Automated Clean-in-Place (CIP) 3-tank / 5-tank systems guarantee reproducible bio-film eradication.

1. The Expanding Dairy Sector in Bangladesh

The commercial dairy sector in Bangladesh is undergoing rapid structural transformation. As urban centers such as Dhaka, Chattogram, Sylhet, and Gazipur experience sustained population growth, consumer demand has transitioned decisively from unorganized informal milk distribution toward packaged, quality-certified pasteurized and UHT (Ultra-High Temperature) milk, yogurt, laban, ghee, and dairy desserts.

Establishing a high-yield dairy processing facility requires harmonizing mechanical engineering, thermodynamics, sanitary metallurgy, and automation. Without properly engineered thermal processing and cleanroom packaging, raw milk in tropical climates rapidly deteriorates, resulting in batch contamination and significant financial loss.

2. Raw Milk Reception, Deaeration & Rapid Chilling

Milk arrives at the processing plant from regional Bulk Milk Cooling (BMC) collection centers at temperatures ranging from 4°C to 10°C. Upon reception through sanitary centrifugal intake pumps, the milk passes through:

  • Duplex In-Line Strainers: Stainless steel 304/316 mesh filters to eliminate physical particulates.
  • Deaeration Vessel: Vacuum deaerators to strip dissolved gases, unpleasant feed volatile odors, and prevent foaming during flow metering.
  • Plate Pre-Cooler Skid: Using 1°C chilled water from an ammonia or glycol refrigeration plant, incoming milk is instantly stabilized below 4°C before storage in vertical insulated milk silos.

3. Continuous Pasteurization vs Tubular UHT Systems

The core of the dairy plant centers around its thermal destruction profile. Depending on target distribution channels, plant owners select one or both of the following pathways:

Pasteurized Pouch Milk (Cold Chain Distribution)

Plate Heat Exchangers (PHE) operate on High-Temperature Short-Time (HTST) parameters, heating milk to 72°C–75°C with a 15–20 second holding tube, followed immediately by regenerative cooling to 4°C. Modern multi-stage pasteurizers achieve up to 92% regenerative thermal recovery, where outgoing pasteurized milk pre-heats incoming cold raw milk, drastically lowering boiler fuel consumption.

Aseptic UHT Milk (Ambient Distribution)

For ambient shelf-life of 6 to 9 months without cold-chain storage, indirect tubular UHT sterilizers heat product to 137°C–142°C for 4 seconds under elevated hydraulic pressure to prevent boiling. The milk is subsequently cooled in sterile tubular heat exchangers before entering an aseptic surge tank and aseptic roll-fed carton filling machine.

4. Homogenization Dynamics & Plunger Life

To prevent butterfat separation and create consistent emulsion and mouthfeel, high-pressure homogenizers break fat globules from 4 microns down to below 1 micron. Operating at two stages (First stage: 180–200 bar, Second stage: 40–50 bar), homogenizers experience severe mechanical stress.

In Bangladesh, sourcing genuine ceramic or hardened tungsten carbide plungers and genuine valve seals is vital. Low-quality counterfeit seals cause abrasive scoring of the cylinder block, leading to hydraulic oil contamination and costly breakdown downtime.

5. Value-Added Dairy: Yogurt, Ghee & Butter Lines

Diversifying product lines protects dairy plant profitability. Food Plast International regularly engineers and installs:

  • Sweet & Sour Yogurt (Doi) Plants: Dimple-jacketed milk standardization tanks, culture dosing skids, cup filling and foil-sealing lines, and automated incubation rooms maintaining 42°C followed by blast cooling tunnels.
  • Butter & Ghee Processing: Continuous butter churns, cream aging vats, and automated ghee boiling pans with multi-stage filter presses and tin/glass container packaging.

6. Clean-In-Place (CIP) Automation

A dairy plant cannot function reliably without an automated Clean-In-Place (CIP) skid. Modern 5-tank systems (Recovered Water, Caustic Soda 1.5–2.0%, Intermediate Rinse, Nitric Acid 0.8–1.2%, and Sanitized Final Water) cycle automatically via PLC-controlled pneumatic mixproof valves. Precise conductivity sensors regulate chemical concentrations, eliminating manual dosing human errors and guaranteeing bio-film eradication.

7. Turnkey Execution: From Design to Handover

From initial CAD layout drafting, steam boiler and air compressor sizing, overseas machinery LC coordination, to on-site orbital stainless steel piping and trial test runs, Food Plast International delivers end-to-end commissioning across all districts of Bangladesh.
